Today I am thankful for the health of my children.
I made this tasty apple cake over the weekend….the recipe is so simple, I tweaked it a tad and will post the adjustments after the recipe link.
An apple a day keeps the doctor away….do you suppose that includes apple in cake?? HA!
Here is the recipe link (I still cannot figure out how to add links, so I will copy and paste the recipe…if someone would like to help me out in the links category, I would muchly appreciate it!)
Apple Cake:
Ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 2 cups white sugar
- 1 teaspoon baking soda
- 1 1/4 cups vegetable oil
- 2 teaspoons vanilla extract
- 3 eggs, beaten
- 3 1/2 cups chopped apples
- 1 cup chopped walnuts
- 1 1/4 cups packed brown sugar
- 1/3 cup milk
- 1/2 cup butter
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
- In a large bowl, Sift together flour, sugar, salt and soda. Make a well in the center and add oil, eggs and vanilla. Mix well (batter will be thick). Fold in chopped apples and nuts. Spread into a 9×13 inch pan.
- Bake at 350 degrees for 40 to 50 minutes, or until a toothpick inserted into cake comes out clean. Glaze while still hot.
- To make the glaze: In a saucepan, combine brown sugar, milk and butter. Bring to a boil and continue cooking for 2 1/2 minutes, stirring constantly. Pour over cake while still hot.
My adjustments were as follows:
~I halved the sugar measurement
~Added 1t of cinnamon
~Cut the glaze measurements in half (it makes WAY too much if you use the recipe measurements.
Happy Baking! 🙂

Kim….I would SO love and appreciate that!! I know you have told me how over email, as Deana has too, but I just can’t get it….a verbal-hands-on walk through is just what I need!!! When would be a god time….I am a SLOW learner, so it might need a chunk of time!! Thanks!!
@Frugal Feeding….good idea, I will take it to the doctor….LOL!! 😉

I saw this early this morning and had to make it right away. I just got done making it about half an hour ago and I absolutely love it! I have been looking for something different to make for Thanksgiving, this will totally be a treat for my family and quite possibly I may have one up on my mother. Thank you very much for sharing this.
