Made this for dinner…SUPER YUMMY and CRAZY EASY!!

You can find the recipe on wholeliving.com or get it below.  It is great with just the veggies as a side dish.  Add shrimp, chicken or tofu for protein and to make it into a meal.

1 box of plain couscous prepared according to directions

15-20 large shrimp, cooked

snap peas cut into bite size pieces

1 pint cherry tomatoes, halved

1/4 cup fresh basil, chopped

2 scallions, thinly sliced

2 T olive oil

2 t grated lemon zest

juice of 2 lemons

mix it all together and serve

I whisked the olive oil, zest and lemon juice, then added to couscous and veggies

salt and pepper to taste!

DELIZIOSO!!
